Millet kutya (kutia)


1 cup of millet,
150 g raisins,
150 g of figs,
100 g of honey.

Cook millet porridge.

Wash raisins and figs, boil in a small amount of water, add to the porridge.

Stir with honey and cool it.

Pumpkin with honey


400 g of pumpkin,
1 glass of water,
200 g of honey.

Peel the pumpkin from the peel and seeds.

Cut into cubes, pour water, cover and simmer until done.

Duck with mushrooms


one duck carcass
2 tablespoons of fat,
1 onion,
one tablespoon of tomato paste,
1 pound of fresh mushrooms,
ground pepper,


Cut the duck in portions, salt, pour with water and cook until half cooked.

Remove the duck pieces from the broth, add sliced mushrooms, pour the sauce and cook until ready.

Prepare sauce: chop onion and fry in the fat, add flour, tomato paste, stew, and then dilute with remaining duck broth.

Ukrainian beef rumen (paunch)


1 pound of beef rumen
1 tablespoon wheat flour,
1 tablespoon butter,
2 tablespoons of millet,
1 tablespoon crushed rusks,
1 egg,
1 onion,
2 potatoes,
1 carrot,
1/2 cup of broth,
parsley root,


Rinse the rumen, turn it over and dip into boiling water for 5 minutes.

Remove the film from the rumen if it is, pour the rumen with cold water and leave for 8 hours, changing the water every 2 hours .

Put the rumen in fresh water and boil for 4 hours. In just a few minutes until cooked add salt.

Cut the rumen into small pieces.

Fry the flour and dilute with a small amount of broth.

Cut carrot, parsley, onions and potatoes into sticks, fry in butter.

Put rumen, flour, washed millet and roasted vegetables in a saucepan. Cover and simmer until done. Then sprinkle with pepper, beat the raw egg and mix.

Heat the baking mold, oil it and sprinkle with rusks. Place the prepared mass from the rumen, sprinkle with oil and bake in the oven.

Chicken soup with kletski (dumplings)


1/2 gallon of chicken broth
10 ounces of boiled chicken meat,
1/2 cup flour,
1/2 cup water,
3 tablespoons of vegetable oil,
3 eggs,
greens of dill and parsley,
red ground pepper.


add the oil and salt into the boiling water, then gradually pour the flour into the pan. Cook until the mass is curled into a ball, and then remove from heat, cool and mix with two whipped eggs.

Divide the dough into two parts. Add chopped fresh greens in one part and red ground pepper in another part. Grind the meat in a meat grinder, add the beaten egg and add to the broth.

Put the pieces of dough into a boiling broth and cook until the kletski come up.

Fish in sauce


2 pounds of fish,
2 ounces of flour,
3 tablespoons of vegetable oil,
3 onions,
1/2 cup walnuts,
1 cup water,
1/2 cup of pomegranate juice,
2 tablespoons of tomato paste,
bay leaf,
1/2 pod of chili pepper,


Grind the onion, saute it in vegetable oil.

Crush garlic with walnuts, pepper and salt. Pour water, add bay leaves, tomato paste and boil for 5-10 minutes. Then pour the pomegranate juice.

Separate fish fillets, cut into small portions, rub with salt, roll in flour and fry.

Put the fish in a saucepan, cover with onion, pour sauce and stew.

Mandryky (or mandriki, mandryks)


3 cups of wheat flour
1/2 cup sour cream,
1/4 pounds of butter,
2 eggs,
2 boiled yolks,
2 tablespoons of sugar,
1/2 teaspoon of salt,
fruit or berry jam.


Sift the flour on a board, make a hollow in it, place eggs, crushed boiled yolks, butter, sugar, sour cream, salt and quickly knead the dough.

Put the dough on a plate and cover with a clean towel and put on 30-40 minutes in a cold place.

Roll out the finished dough with a thin layer. Cut out the circles. For each circle, lay a smooth layer of fruit or berry jam, and wrap the edges of the mandryks inward and protect.

If you use fresh berries, it will be better to pre-extinguish them, drain the formed juice, add sugar to taste.

Put the mandryky on a greased baking sheet and put in the oven for 10-15 minutes for baking.
