Light blini (bliny, pancakes)



4 cups of flour,
2 cups of milk,
1 oz. of yeast,
4 eggs,
2 teaspoons of sugar,


Mix the yeast with 1 cup of flour and 1 cup of warm milk. When the dough has risen, add the remaining milk and flour.

Allow the dough to rise again, and then add the egg yolks whipped with sugar, mix and add whipped egg whites. Gently mix the dough and then bake the blini.
