Ukrainian beef rumen (paunch)

Ingredients

1 pound of beef rumen
1 tablespoon wheat flour,
1 tablespoon butter,
2 tablespoons of millet,
1 tablespoon crushed rusks,
1 egg,
1 onion,
2 potatoes,
1 carrot,
1/2 cup of broth,
parsley root,
salt,
pepper.

Cooking

Rinse the rumen, turn it over and dip into boiling water for 5 minutes.

Remove the film from the rumen if it is, pour the rumen with cold water and leave for 8 hours, changing the water every 2 hours .

Put the rumen in fresh water and boil for 4 hours. In just a few minutes until cooked add salt.

Cut the rumen into small pieces.

Fry the flour and dilute with a small amount of broth.

Cut carrot, parsley, onions and potatoes into sticks, fry in butter.

Put rumen, flour, washed millet and roasted vegetables in a saucepan. Cover and simmer until done. Then sprinkle with pepper, beat the raw egg and mix.

Heat the baking mold, oil it and sprinkle with rusks. Place the prepared mass from the rumen, sprinkle with oil and bake in the oven.
